Today I’m going to share a recipe using some more of the peppermint we harvested last week. Now I’ve never been one to shy away from an adult beverage, but in this case, I actually enjoy the mocktail more than the alcoholic version with the added rum! It’s so light and refreshing.
To make the honey-ginger syrup, you’ll need to make a strong ginger tea (decoction). In a small saucepan, add a 1” piece of ginger, roughly chopped, and 1 cup of water. Bring water to a boil, and simmer for about 5-10 minutes. Remove from the heat and allow the decoction to cool for about 1 hour. Strain out the ginger and top up with a bit of water to have 1 cup of liquid. Combine ginger tea with 1 cup of honey, (or use your mint infused honey!) stirring to blend. Store in the refrigerator until ready to use.
Now you have ginger syrup that you can use to make this easy mojito or use a topper for frozen yogurt/ice cream or in some sparkling water or warm water to help settle stomachs.
